Why fresh fruit and vegetables are so important for good health

We all get that we’re supposed to eat plenty of fresh fruit and vegetables. But now scientists are trying to figure out just why they’re so good for us. For one, they reckon that those who eat the most fruit and vegetables have a 15 per cent lower risk of heart disease and a 20 per cent reduced chance of dying prematurely. And now they think they know why.

Those who eat the most fruit and vegetables also have the highest levels of vitamin C in their blood. The nutrient helps build tissues that support and connect organs and other tissues, and it’s also a powerful antioxidant that protects cells and biological molecules from the damage caused by disease.

Researchers from the University of Copenhagen made the connection between the vitamin and longevity when they analysed data on around 100,000 Danes, which included their diet and DNA samples.
