Women who often eat bread, potatoes and root vegetables increase their chances of developing breast cancer by nearly 30 per cent.
But it’s not because the foods are bad – it’s because they are the most likely to contain cadmium, a toxic metal found in farm fertilizers. Plant-based foods and cereals – including bread and other cereals, potatoes and root vegetables such as turnips and parsnips – retain the highest levels of cadmium, which causes breast cancer.
The risk reached 27 per cent in women who had normal weight, although the overall risk in all women was 21 per cent, say researchers from the Karolinska Institute in Sweden, which reviewed the diet and health of 55,98 women over 12 years.
Levels of cadmium in the body can be reduced by eating whole grains and other vegetables, especially organic, say the researchers.
