How our diet increases our risk of chronic health problems

Inflammation is a key factor in many chronic diseases, from heart problems, arthritis to some cancers—and the typical Western diet is to blame.

The good news is that it can be quickly reversed—often in a matter of weeks—if you switch from processed foods to eating more vegetables and fruits.

Researchers at Radboud University Medical Center in the Netherlands discovered the big effects the Western diet has on our health when they analysed the health and diets of 77 healthy men from Tanzania; those living in rural communities were still eating the typical African diet of vegetables and fiber, while the affluent city dwellers were eating more processed foods.

When the researchers switched the diets—the rural dwellers started eating processed foods, while the city livers ate the typical African diet—they noticed a big change in inflammatory markers in just two weeks.
