Brightly coloured fruit and veg don't just look pretty on a plate; they're also teeming with nutrients along with a whole host of health benefits.
Lycopene, for instance, the antioxidant pigment that gives tomatoes their bright red colour, has been linked to a lower risk of cancer and heart disease,1 while carotenoids, which give oranges their hue, are rich in vitamin A—important for eye health and the immune system. As for greens—well, we all know how important it is to eat them.
- 2 avocados
- ½ cup fresh peas (frozen are fine too)
- 1 small white onion
- 1 handful (15 g) fresh dill
- 2 Tbsp freshly squeezed lime juice
- ½ tsp Himalayan salt
- Blend all the ingredients together in a food processor and serve with cherry tomatoes, peas and broccoli—or other fruit and veg of your choice.
